My friend Heather A shared this little recipe in our Facebook group to celebrate the premiere of the 4th season of Downton Abbey. She decided the affair called for fancy British food to snack on so she made some really cute and easy Cucumber Sandwiches! With the summer in full swing (at least here in Georgia) it is also time for wedding and baby showers and just about any other reason you can think of to gather with friends. So, if you need a quick and easy recipe – this is the one!

EASY & CUTE CUCUMBER SANDWICHES
1 Cucumber
½ cup of Sour Cream
½ cup of Mayo
8 oz of softened cream cheese
1 – 1oz packet of Ranch Dip Mix
White bread

Step #1 – use a small decorative cookie cutter to cut out the slices of white bread.

Step #2 – Peel the skin off the cucumber and then slice it very thin. Then put in between 2 paper towels to soak up the extra moisture. You don’t want them to be slippery.

Step #3 – mix up the spread! In a small batter bowl mix the sour cream, mayo, softened cream cheese and ranch dip mix together until incorporated together.

Step #4 – Put mixture into a ziplock bag (I used a freezer quart size bag) and snip a corner to use as a piping bag.

Step #5 – Put it all together! 1 piece of bread, pipe a layer of the spread, put cucumber on top of that, another layer of spread and then top with another piece of bread.

Step #6 – Arrange on a cute plate, cover with saran wrap and chill for a half hour or more. Then enjoy!
