Creamy Italian Parmesan Dressing {recipe}

Ingredients:

1/4 cup mayonnaise
1/4 cup Greek yogurt
1 tablespoon olive oil
2 tablespoons red wine vinegar
1/3 cup freshly grated parmesan cheese
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano, minced
1/4 teaspoon dried thyme
Small handful fresh Italian parsley (appx. 4-5 sprigs)
Small handful fresh fresh basil (appx. 3 large leaves)
1/4 teaspoon salt
1/2 teaspoon pepper
Milk, if needed

Instructions:

Add all of the ingredients to a blender and blend until smooth.

If the mixture is too thick, taste it first and add either additional vinegar or milk to thin it out, one tablespoon at a time. I prefer a more vinegary dressing, so I usually opt for vinegar.

Taste it again and adjust the seasoning to your liking before serving.

This dressing is best when allowed to sit for 30 minutes to an hour in the refrigerator. This allows the flavors to blend and the dressing to thicken up a bit.

The consistency of yogurt can vary greatly, which can affect the consistency of the dressing. If yours is too thin, you can either add more mayonnaise, yogurt or Parmesan (or some of all three). And if it’s too thick, you can add additional liquid as mentioned above.

You can easily make this dressing without a blender. Just finely chop the herbs and use a whisk to mix it up.

You can also change the herbs up to suit your tastes. Tarragon or dill would be delicious in this.
